I misspelled my name when setting up my digital signature. Is there a way to go back into the setup and correct the problem?

You can't change the name, you can delete the ID and create a new one.
Manage Digital IDs here:
In Reader, Document -> Security Settings
In Acrobat, Advanced -> Security Settings
