Hi sy,

Activate the text box tool and create a text box.  Go to View ->Toolbars and select Properties Bar.  The Text Box Text Properties toolbar will open.  The first option from the left side of that toolbar (Large T) allows you to choose text color.  Change this to black.  If you now type in the text box you should have black text.  To make this the default setting, with the Text Box tool activated, Right Click on the text box with the black text and choose "Make Current Properties Default."
